Boneless Ribeye
This cut is probably the most popular steak in American households. Due to its high marbling, which contributes to rich flavor and incredible tenderness, the boneless ribeye boasts one of the most beefy, buttery, and bold flavors of beef. It’s incredible on its own, but equally as delicious when used in Philly cheesesteaks, or sous vide, seared and served with compound butter.

Boneless Tenderloin
Also known as the filet mignon roast, this is the most tender cut of beef due to minimal muscle use. And although this cut is leaner, it is incredibly flavorful and has many uses. You can find the boneless tenderloin featured as a beef wellington, used in carpaccio or cut into filet mignon medallions. Oh and this cut loves sauces.

Boneless Striploin
Also known as New York strip or strip steak, this cut is one of America’s favorites due to its familiar chew and even marbling. Considered a steakhouse classic, the boneless striploin can be served as a New York strip steak or even high-end steak fajitas. Oh, and it’s a perfect steak to sous vide.

Top Sirloin Butt
The top sirloin butt or center cut sirloin, is one of the most underrated and underutilized cuts of beef. It offers moderate but even marbling that creates a familiar chew without sacrificing flavor. It has a rich and beefy profile and is great in stir fry, skewered and grilled as kabobs, or used in beef stroganoff.

Tri-Tip Roast
The tri-tip is a West Coast champ that has one of the most deep and beefy flavors available. It has moderate marbling but holds up to famed low and slow cooks. In fact, it’s the darling of Santa Maria BBQ and is becoming competition pitmasters’ cut of choice. Reverse sear it, sous vide it or use the leftovers for a variety of sandwiches, the tri tip is having its day.

Typically consisting of chuck, sirloin, and sometimes ribeye or even brisket - there really isn’t a more versatile protein available on planet earth. From high-fat content to lean offerings, Americans enjoy ground beef more often than any other beef product. From burgers to tacos and chili to meatballs - ground beef is the clear favorite among ALL beef eaters (and many times vegetarians who had too much to drink on the weekend).
